Jell-o Jiggler Shots
Yes, these are my original recipies, resurrected from the graveyard of the internet. If you google around for “Litherland Jell-o Shots” you’ll find these recipies all over the place. They are, indeed, my original creations.
I’ve recently mixed a few batches of these up and I realized that I should probably provide some generic directions. It’s basically the same for all of these recipes (except the Knox ones, which are really gross, don’t bother making them) and pretty simple. I’m sure other techniques work just as well, but this way tends to set the recipe well and maximize alcohol retention.
First I prepare the thing I’m going to pour the jigglers into. The little Jell-o Jiggler egg molds are awesome for these recipes, however I’ve lost mine and have been unable to find another set. Whatever you do don’t pour these kind of shots into paper cups. Not only does it lead to an unpleasant, uh, dining experience, but you end up throwing out half of your recipe because your guests can’t suck all the contents out. Plastic works a little better, but find some molds or pour them into a larger tray and cut them. It’s not that freaking hard.
If I’m using a tray I try to stick with a flat-bottomed glass container with a fitted lid. These I stick in the refrigerator for a half hour or so ahead of time, or the freezer for a few minutes. It’ll help the Jell-o set faster with less evaporation. If you’re using the egg molds or pretty much anything plastic have a shallow tray with ice-cold water handy. For any type of mold or tray coat very lightly with a spray of release agent (like Pam cooking spray) and smooth it onto the surface of the mold or tray. Yes your finished product will be a little greasy, and no, you won’t taste it. It will make clean-up easier too.
I start by boiling just the 1 cup of water (or juice for the Sea Breeze) in a 2 qt pot. While you wait for it to boil open your Jell-o packets and pour your alcohol into the measuring vessel but leave it by the side until you’re ready. When the water (or juice) is boiling turn off the heat and dump the packets in while stirring. You should be able to dissolve the Jell-o very quickly into water and as soon as you do this add the alcohol and give it another quick stir.
The pouring depends on what you’re pouring into. If it’s a glass tray (which you’ve cooled down, right?) just pour it in, seal the lid and stick it in the refrigerator. The lid keeps the partial pressure high in the vessel and helps stop alcohol loss by evaporation. The tray or bowl is probably still pretty cool from it’s initial chill and putting it back into the refrigerator quickly will mean your Jell-o will be done quickly. Freezing is probably just as viable an option, but I seldom have enough freezer space available to lie something like this flat in.
If you’re pouring into a mold place the mold into the cold water bath first if possible. The plastic will of course try to float so you either have to be quick and hold it down while you get some poured or have a friend help you. If you totally lack skill pour it quick and then ice it for a minute. That gives it a good head-start on cooling and then you can transfer to the refrigerator or freezer. Just remember that cooling it quickly is really the key to good alcohol retention and nobody likes wasting good alcohol.
One more trick I picked up that relates especially to the egg molds. These have a tiny opening and if you try to pour from a pot to the little hole you will fail. Yes, Martha, I know you happen to have the perfect sized funnel lying about, but for the rest of us we can take little squares of looseleaf paper, roll them into a cone shape and use that to pour. It’ll hold up for one set of six eggs (a whole batch) and can then be tossed. Not terribly environmentally friendly, but neither is sticking your tiny little funnels in your automatic dish washer.
So that’s about it. If you’ve used the egg molds in an ice bath and then tossed them in a freezer these things can be do in 20-30 minutes. Anything else in a refrigerator I’d give an hour at least.
